Stachys affinis, Chinese artichoke or commonly called crosne, is an herbaceous plant raised in worldwide and its roots are eaten for various purposes. For example, they are popular as vegetable foods (e.g. eaten raw, picked, dried or cooked) in Europe and tea and herb medicines in China, Korea, Japan and other Asian countries. I believe Stachys affinis can have a high potential as value-added farm products in North America since the plants can be raised well and there are sufficient customers who want to eat the products made of Chinese artichoke. I want to cultivate it and execute a business in making and selling various products (e.g. e.g. roots in raw, tea in powder, eatable bar, and herb medicine) made of Stachys affinis cross Canada and US. As a trail purpose I had cultivated some Stachys affinis in my house last year to produce some seedlings for this year. Now I have been raising baby plants as seedlings based on the crops I produced last year. The seedlings are almost grown up to be ready for planting on land. Hopefully the future business is expected to expand curtivation of Stachys Affinis.
